Make Something Monday

I had never made cornmeal muffins before, but some of the ingredients in this recipe sounded like the muffins would be moist and delicious, so I made them! Plus the recipe was from a friend's mom and I know she only makes yummy food! :-)

Cornmeal Muffins

  • 1 c. flour
  • 1 c. cornmeal
  • 2 Tbsp. chopped onion
  • 1 c. creamed corn
  • 1/2 c. mayo
  • 1/3 c. sugar
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 3 Tbsp. oil
  • 1 egg

Combine dry ingredients. Make a well in the center and add other ingredients. Stir until moistened. Bake in muffin papers in a muffin pan at 400 degrees for 20 minutes. Makes 1 dozen.


These muffins turned out just as delicious as I expected! They went over well with Rich and Blake, but Morgan decided that she didn't like them. I think she is getting pickier! :-/

    So sorry that I did not have the MSM up today. I have been extremely overwhelmed with going back to work and it quite honestly slipped my mind!! I'll be back in the swing of things next Monday!
