Simple Taco Bake

I like tacos, but wanted to change it up a bit for Cinco De Mayo last week, so I made this recipe.  We really enjoyed it and love that it isn't as messy as eating a taco! :-)
 

Simple Taco Bake:
* 1 pound lean ground beef
* 1/2 cup onion, chopped
* 2 Tablespoons taco seasoning
* 6 flour tortilla shells (8 inch), broken into medium-small pieces
* 1 can condensed tomato soup
* 2 cups shredded cheddar cheese
 
  • Brown your meat with the onion.
  • Drain the meat and return to the pan. Add the taco seasoning and tomato soup.  Stir and simmer for 5 minutes
  • Cover the bottom of a medium size casserole dish with ½ of the broken tortilla shells.
  • Layer half of the meat mixture on the tortilla shells. Top with half of the cheese.
  • Repeat the layering process and place in the oven at 350 degrees for 20 minutes.
  • Serve with lettuce, tomatoes, salsa, sour cream or whatever you like to top your tacos with!

    The idea for this recipe came from here.  I ended up changing it quite a bit to fit what I happened to have at home :-)

    1. YUM the boys would love this, I don't think I've done one like this with the soup in it. I'll have to give it a whirl, and I can smell it and drool ... LOL
